圣诞杯子蛋糕 (Christmas Cupcakes)


今晚平安夜,妳准备好了如何庆祝了吗?
单身的妳,记得别太疯狂哦
有伴的你,记得要陪那个她/他度过哦




这次在烘培店买了翻糖糕
没加色素也很沾手
以为做好隔天会变干、变硬
可是到拍照还是一样
Joezyln 还以为是糖霜呢
哈哈哈哈
翻糖高手们,是不是因为晚上又是雨天的关系?
所以翻糖糕特别容易有湿气呢?


杯子蛋糕体是使用:~
材料Ingredients:
奶油(室内软化)Butter (at room temperature) 
125g

细砂糖 Fine Sugar 
90g

鸡蛋(室温) Eggs(At room temperature) 
3粒

低筋面粉 Cake Flour
160g

淡奶油 Whippng Cream
120ml

香草精 Vanilla Extract
1tsp

泡打粉 Baking Powder
1tsp


做法 Method:
1.粉类过筛,备用。预热烤箱170度。
Shift the cake flour & baking powder,set aside.Preheat the oven to 170 degrees.

2.奶油加糖搅拌至泛白及松发。
Mix the butter with sugar unti soft & fluffy.

3.逐粒鸡蛋加入奶油内,须确保鸡蛋充分混合均匀才把下一粒鸡蛋加入。
Add the eggs one at a time and mix completely after each egg.

4.把过筛的粉类和淡奶油交替加入,并搅拌均匀。
Alternate adding the flour & whipping cream,mixing thoroughly after each addition.

5.把香草精加入,搅拌均匀。
Stir in the vanilla extract.

6.把面糊勺入纸杯里,再把蓝莓洒在面糊上,烤20分钟。
Spoon the batter into the baking cup,put the blueberry on top of the batter,bake 20 minutes till cooked.

7.冷却后,才装饰!
Wait till completely cool & decorate it!

巧克力海绵杯子蛋糕 ~ 全蛋法 (Chocolate Sponge Cupcake)


不论你多么富有,多么有权势

潇潇洒洒过,不是很快活吗?




全蛋海绵蛋糕屡试屡败
却屡败屡想成功
终于做成功了一次,信心满满的想做多一次杯子的
可惜啊,信心太满变自大了
蛋糕是发起来了,可是原来面粉搅不匀
惨淡收场
这次【小小杯子蛋糕】活动突然想起了它
调解心情再次接受挑战
改用了食材简单的食谱
想不到,我再次失败多次后又成功了
老天啊,难道要我失败几次才成功吗?

加入巧克力块融化后加入面糊内
蛋糕有好浓郁的巧克力味儿
喜欢极了
全蛋打法,我会继续再把你打败的
等我我吧。。。哈哈哈



巧克力海绵杯子蛋糕 Chocolate Sponge Cupcake
5个直径6cm,高2.5cm圆形纸杯
5 pieces of length 6cm,height 2.5cm round cup liner 

材料 Ingredients :
鸡蛋 eggs 2pcs
细砂糖 Granulated Sugar 35g
香草精华 Vanilla Extract 2、3滴 drops
特幼面粉 Superfine Flour 40g
可可粉 Cocoa Powder 10g
奶油  Butter 25g
黑巧克力块 Dark Chocolate 30g

做法 Method:
1.奶油隔水融化,取出水锅,加入巧克力块搅拌至融化,再把可可粉加入搅匀,待用。
Use double boiled method to melt butter,remove from stove once melted,add in dark chocolate,stir till melted,lastly add in cocoa powder and mix well,set aside.

2.把鸡蛋和细砂糖倒入一干净钢碗内,以隔水加热一边打发,直至蛋糊微温状态。取出,继续打发至浓稠可在面糊上写字。
Place a bowl over the double boiler, so that the bottom is submerged in the water. Add the eggs and sugar, and beat the mixture with a whisk while heating until warm to the touch (do not overheat.)Continued whisk till foamy & shinny.

3.把面粉分两次筛入蛋糊内,用一塑胶刮刀搅匀。
Shift in flour twice and mix with a rubber spatula till well combined.

4.勺少许面糊入巧克力糊内,搅匀,再把巧克力糊倒入面糊内,以塑胶刮刀快而轻搅拌均匀。
Spoon some batter into chocolate batter,mix well.And pour all the chocolate batter into egg batter,use a rubber spatula mix well.

5.把面糊勺入纸杯,放入预热烤箱,160度烤25分钟或竹签插入没粘连。
Spoon batter into cup liner,bake in preheat oven and bake for 160 degrees and 25 minutes or use a wooden pick to test.

乳酪布朗尼杯子蛋糕 (Cheese Brownies Cupcakes)


难得Aunty Young提议玩玩乳酪主题的杯子蛋糕
我当然高兴
邀约好些喜欢乳酪的盆友
也邀约了好些FB盆友
大家一起共襄盛举
一起在网上来个乳酪圣诞趴



家里三个男的都不爱乳酪
所以我只做了几个一饱食欲
布朗尼蛋糕放入冰箱再拿出来吃
一开始是有点扎实
可是配上软绵绵的乳酪蛋糕
感觉像吃着饼干与乳酪
如果你不喜欢扎实的布朗尼
可以放在室温10分钟
布朗尼就没那么硬与扎实了


乳酪布朗尼杯子蛋糕
Cheese Brownies Cupcake
圆形小纸杯 Round Cup Liner 5pcs

材料(布朗尼面糊)
Ingredients (Brownies Batter)

无盐奶油 Unsalted Butter 25g
黑巧克力 Dark Chocolate 25g
细砂糖 Granulated Sugar 25g
鸡蛋 Egg 20g
动物鲜奶油 Whipping Cream 10g 
蛋糕粉 Cake Flour 25g 

做法 Method :
1.无盐奶油与黑巧克力一起隔水融化,把碗取出,加入细砂糖,搅拌至糖溶化。
Double boiled for melted the unsalted butter and dark chocolate,remove from stove ,add in granulated sugar,stir till sugar dissolve.

2.继续加入鸡蛋、动物鲜奶油,搅拌均匀。
Continued stir while add in egg and whipping cream.

3.筛入面粉,用橡皮刮刀拌匀,勺入小纸杯至半内。
Shift in flour,use a spatula to mix well,spoon in to the cup liner till half.

4.放入预热烤箱170度,12分钟,取出。
Bake in preheat oven 170 degrees for 12 minutes,remove from oven.

**当烤着布朗尼时,可以准备乳酪面糊了**
**While waiting for the brownies,let's us prepare the cheese batter**

乳酪面糊 Cheese Batter
材料 Ingredients

奶油奶酪 Cream Cheese 125g
香草精化 Vanilla Extract 1tsp
细砂糖 Granulated Sugar 20g
鸡蛋 Egg 30g
动物鲜奶油 Whipping Cream 30g

做法 Method :
1.奶油奶酪隔水软化,加入细砂糖一起搅拌至融化。
Soften the cream cheese with double boiler method,add in the sugar stir till dissolve.

2.加入香草精华、动物鲜奶油与鸡蛋,搅拌均匀。
Add in vanilla extract\whipping cream and eggs,stir well.

3.搅拌至顺滑的面糊,勺入布朗尼蛋糕上,抹平,放入烤箱170度烤15分钟。
Stir till smooth,spoon in the top of the brownies,bake in preheat oven,170 degrees 15 minutes

4.取出,放凉,冷藏冰箱再享用。
Remove from oven,let it cool a bot and cool completely in fridge.

寄居蟹香肠小面包 (Hermit Crab Sausage Buns)

我对于做造型完全没辙
想想买了一套的圆筒,是时候拿来一用了
翻找网页如何卷面团,无意做看到这可爱的寄居蟹造型
好可爱咧
可惜啊。。。可惜
我手很不巧,做了走样的寄居蟹
呵呵呵呵



冷藏液種:
高筋麵粉 High Protein Flour75g
Water  75g
即發乾酵母 Instant Dry Yeast 0.5g

做法:
將酵母化在水中,加入高筋麵粉,將兩者混合均勻。將其放在溫暖處發酵至內部起泡,放入冰箱冷藏超過16小時。
Mix all ingredients,and set aside for rise about 1 hour,and put in fridge for at least 16 hours.

主麵團:
高筋麵粉 High Protein Flour 125g
低筋麵粉 Low Protein Flour 50g
即發乾酵母 Instant Dry Yeast 2g
細砂糖 Granulated Sugar  40g
海鹽 Salt 1/4茶匙
奶粉 Milk Powder 10g
冷蛋液 Cold Egg 25g 
水  Water 55g
牛油 Butter 25g

红丝绒北海道杯子蛋糕佐巧克力卡士达馅 (Red Velvet Hokkaido Cupcakes with Chocolate Custard)


看到了满部落的北海道杯子蛋糕了吗?
是否惊讶?还是。。。
感到很爽?
我是非常的爽
有得吃,有得看
大家高高兴兴参与,何乐不为?



北海道杯子蛋糕,原来的口味只是香草的
而后来被很多朋友创造出了很多不同口味的
草莓啦、抹茶啦、咖啡啦、柳橙啦、可可啦
我曾经试做了可可的,因为是大众口味
所以都一扫而空
至于抹茶口味的,家里没人欣赏,未免浪费
还是待回去Aunty Young家吃好了

这次玩点特别的,来杯红丝绒的,如何?
这蛋糕绝没色素哦,用的是全天然的红麴粉
虽然不是太出色,至少吃得安心点
买了一盒超大颗的美国草莓
用来装饰,最适合不过啦



材料 Ingredients :
(A)
细砂糖 Granulated Sugar 25g
牛奶     Milk                      100ml
植物油 Vege Oil                40g

(B)
低筋面粉  Low Protein Flour 80g
可可粉      Cocoa Powder       15g
红麴粉      Red Yeast Powder 10g 

(C)
蛋黄  Egg Yolk 5 noz (I used A size)

(D)
蛋白  Egg Whites 5 noz
幼糖  Granulated Sugar 50g

做法 Method
1.将(A)煮热(有点小泡泡),离火。把(B)筛入拌匀,等稍微冷,把蛋黄逐粒加入搅拌均匀。备用。
Cook the (A) ingredients till bubbles,remove from stove.Shift in (B),wait the mixture a bit cold,add in egg yolk one in a time,mix well.Set aside.

2.蛋白加入幼糖打至硬性发泡。
Add sugar into egg white and beat till stiff peak.

3.把1/3蛋白加入蛋黄糊拌匀,再倒入剩余蛋白,搅拌均匀。
Fold 1/3 egg white into egg yolk mixture,mix well.Continue mix with 2 mixture till well.

4.勺入四方杯子内,轻敲杯子两下,放入预热烤箱140度35分钟。
Scoop mixture into square cup liner,lightly knock it and bake in preheat oven 140 degrees,35 minutes.

巧克力卡士达 Chocolate Custard
(A)蛋黄 Yolk 2 pc
细砂糖 Sugar 2tbsp
玉米粉 Corn Starch 1tbsp
低筋面粉 Low Flour 1tbsp
鲜奶 Milk 280ml
可可粉 Cocoa Powder 2tbsp
巧克力 Chocolate 25g
奶油 Butter 8g

(B)动物鲜奶油 Whipping Cream 160ml

做法 Method:
把所有材料除了蛋黄与奶油和巧克力,煮至浓稠。
Cook all ingredients except yolk,butter and chocolate till thick.

加入蛋黄,边加入边搅拌。再把奶油与巧克力加入,搅拌至融化。
Add in yolk,stir while add in the yolk one by one.Then add in butter and chocolate,stir till dissolve.

用保鲜膜盖着待冷。
Cover with cling wrap.

把动物鲜奶油打发,再与巧克力酱混合一起,即可。
Whisk whipping cream till stiff,mix with chocolate custard.

Best Recipes for Everyone #5 Dec 14 ~~ My Little Cupcakes(我的小小杯子蛋糕)



Cupcake ~~ is a small cake designed to serve one person, which may be baked in a small tin or aluminium cup.
Originally, cupcakes were baked in heavy pottery cups. Some bakers still use individual ramekins, small coffee mugs, large tea cups, or other small ovenproof pottery-type dishes for baking cupcakes.
In addition to paper, cupcake liners may be made from very thin aluminum foil or, in a non-disposable version, silicone rubber. Because they can stand up on their own, foil and silicone liners can also be used on a flat baking sheet, which makes them popular among people who do not have a specialized muffin tin. Some of the largest paper liners are not fluted and are made out of thicker paper, often rolled at the top edge for additional strength, so that they can also stand independently for baking without a cupcake tin. Some bakers use two or three thin paper liners, nested together, to simulate the strength of a single foil cup.

Muffin ~~ The term muffin typically refers to an individual sized quick bread product which can be sweet or savory. The typical American muffin is similar to a cupcake in size and cooking methods. These can come in both savory varieties, such as corn or cheese muffins, or sweet varieties such as blueberry or banana.
Muffin also refers to a flatter disk-shaped bread of English origin, commonly referred to as an English muffin outside the United Kingdom. These muffins are also popular in Commonwealth countries and the United States.

牛奶红茶餐包 (Milk Tea Buns)



今年7月时做过一款伯爵红茶戚风,之后也忘了收在柜子里的“它”
昨天在柜子找东西,竟然让我发现“它”
有点惭愧,竟然忘了“它”的存在
它~~伯爵红茶包
很少在家泡红茶,享受英式下午茶
上班族嘛,哪有这么写意?
所以这些红茶包也是被我用在烘培上多

把这些红茶叶加入面包里头,味道是如何呢?
这次就来玩玩茶叶面包
呵呵呵


牛奶红茶餐包 Milk Tea Buns
6吋圆模~6颗+4颗香肠卷
6inch round cake pan 
~6 pieces+4pieces sausage buns

伯爵茶包 Earl Grey Tea Bags 2 packs
牛奶 Milk 160ml
高筋面粉 High Protein Flour 180g
低筋面粉  Low Protein Flour 20g
即发干酵母 Instant Dry Yeast 2g
细砂糖 Granulated Sugar 25g
Salt 1/8 tsp
无盐奶油 Unsalted Butter 15g
Topping : Cheddar Cheese

做法 Method :
1.牛奶加热微滚,放入1包红茶包,浸泡3分钟。取出红茶包,放入冰厨冷却,备用。
Heat milk till boil,put 1 pack of tea bag and soak for 3 minutes.Remove tea bag,put the tea in fridge to cool,set aside.

2.所有材料除无盐奶油,把另一包茶叶包撕开,茶叶加入,慢慢加入奶茶混合成团,再把奶油加入,揉出薄膜。
Mix all ingredients,except butter and tear another tea bag,put all the tea leaves together and slowly pour in the milk tea,knead to become a dough.Then ,add in butter continued knead till elastic and have membrane.

3.将面团盖着发酵双倍大,取出面团,排除气体,分割面团,滚圆。
Cover dough and rise till double the size,remove dough and press out the air,divide dough,round the dough.

4.把滚圆的面团放入模内,待发酵40分钟。
Put round dough into pan,rise for 40 minutes.

5.预热烤箱,170度,烤15分钟.
Preheat oven,bake in 170 degrees and 15 minutes.

蓝玉米排包 (Blue Corn Meal Bread/PaiBao)


反复练习着甩打面团,因为这个月的【面包物语】
我才成功做出一款面包
突然很想吃涂抹奶油咖椰的面包
所以做了这个造型简单的排包
讨厌,冷却了放在盒子后,表皮竟然皱了
可是依然无损它的美味

在烘培店买了一包Organic Blue Corn Meal
老板娘说这个比较适合制作面包
因为它没味道
颜色却有点淡淡的紫色
面团真的淡淡的紫,烤出来更加的淡了
