热带月饼 (Tropical Goodies Moon Cake)


难得孩子在家担任我的模特儿,呵呵呵呵
巧克力月饼是小恐龙,这个月饼是大恐龙
两个小瓜被老妈呼来呼去,站在艳阳下,却毫无怨言
他们千吩咐万吩咐千万不能拍到他们的脸,因为他们怕老妈我上传到Facebook

老的吃了一口这个椰丝馅月饼,他说怪怪的
我说还好啊,可能是我平常的椰丝都是放椰糖炒,所以不习惯吧
之后他说吃着吃着好像又不怪了
我说:可能和莲蓉一起吃,把椰丝的味道综合了吧
他听了之后,若有所思地点点头。。。



饼皮和椰丝馅食谱参考Alan Ooi 爱。月饼
Moon cake skin & coconut filling adapted from Alan Ooi  Moon Cakes


莲蓉馅是市售的,所以没有做法哦,分割25克
椰丝馅做法 Coconut filling :
1.牛油放入锅内融化,放入椰丝、糖和清水炒至半干。
Place butter into pan to melt,put in coconut shreds,sugar and water.Fry till semi-dry.
2.拌入糕粉拌匀,盛起待凉,秤每份10g。备用。
Add in Koh Fun and mix well.Remove to cool. Divide 10g each. Set aside.
3.把莲蓉馅按扁,包入椰丝馅搓圆,备用。
Flatten lotus paste,wrap in coconut filling. Shape round and set aside.


饼皮做法 Moon cake skin method:
1.糖浆和枧水混合均匀,加入花生油混合,再筛入低筋面粉搅拌成团,用保鲜膜盖着休息30分钟。
Mix together with sugar syrup and alkaline water,continue with peanut oil,mix well.Shift in low protein flour ,combine become a dough.Wrap with cling wrap and rest for 30 minutes.
2.把面团分割15克,滚圆压扁,包入馅料,放入月饼模内,压出月饼,排在烤盘上,放入预热烤箱,180度烤10分钟,取出待凉,再刷上蛋液继续烤10分钟,待凉后收好,放两、三天回油才享用。
Divide dough into 15g each,round and flatten,wrap in filling,place in a moon cake mold.press gently and put the moon cake onto a baking tray.Put in a preheat oven 180*C for 10 minutes, Remove let it cool and then glaze surface with egg yolk milk. Rebake for another 10  minutes. Remove from oven and let it completely cool,serve after 2,3 days after maturity period.

    好像很好吃的样子。。呵呵
