南瓜虾米沙葛包 (Pumpkin Yambean with dry Shrimp Steam Bun)


今天,陪我一起
饮杯茶,食个包,好吗?

赶时间,随便拍了几张照片
来不及收拾已经被人催促了
只怪自己贪睡,忘了调闹钟
幸亏昨晚做好了包子
今早还是软软的,不必回蒸了
真好



昨晚蒸好,老的迫不及待拿了一粒来吃
他说:这是我做得最合乎他口味的包子
他是沙葛包迷,当然和他口味
在炒馅料时加了少许的五香粉
立即提味,姜还是老的辣
多谢老妈子的提点
外皮使用May家的食谱
真的很棒很棒
可惜捏功生疏了,包子捏得丑丑的
各位将就将就吧,只需在乎它的内在和感受就好啦

馅料 Filling:
沙葛     Yambean    1/2pc
红萝卜 Carrot        1/2pc
虾米     Dry Shrimp 3tbsp

调味料 Seasoning :
胡椒粉 Ground Pepper   1/2tsp
盐         Salt                     few to taste 少许
五香粉 Chinese 5 Herbs 1/4tsp

做法 Method :
1.沙葛、萝卜个别削皮,刨丝。
   Peel off yambean and carrot's skin,then shredded.

2.虾米切碎泡水浸泡。
   Soak dry shrimp into water after chop to small pieces.

3.锅倒入少许油,加入切碎虾米炒香,再陆续把沙葛和红萝卜加入,勺入调味料炒至香,盛起待凉。
   Heat pan with some oil,fry chopped dry shrimp till fragrant,add in yambean and carrot,spoon in seasoning continue to fry till fragrant.Dish up and let it cool before wrapping.

外皮 Skin
南瓜泥 Mashed Pumpkin 100g
包粉     Pau Flour             200g
细砂糖 Granulated Sugar 40g
白油     Shortening           10g
酵母粉 Yeast                    3g
水         Water                  30~40g

做法 Method :
1.将包粉、酵母粉和细砂糖混合拌在一起,加入南瓜泥混均匀。
   Add pau flour,yeast and granulated sugar together,add in mashed pumpkin mixed till combined.

2.再用手指把白油慢慢搓入面粉,徐徐加入清水,揉成光滑有弹性的面团。盖着休面60分钟。
    Add in shortening mix in flour and slowly pour in water,knead till dough become smooth and elastic. Cover and rest for 60 minutes.

3.把发酵好的面团取出,再搓揉几下。
   Remove dough onto table,continue knead for few times.

4.把面团分割每粒50克,滚圆,休面10分钟。
   Divide dough into 50g each,roll round and rest for another 10 minutes.

5.把面团擀成外薄内厚,把面团陆续擀平再包馅。
   Flatten divided dough to become out thin inside thick.

6.把包好馅的包子放在纸上再放入蒸笼,加盖发酵15分钟。
   Wrap in filling and put on a paper and let them rest in steamer with lid for 15 minutes

7.水滚后,以中火蒸12分钟即可。
   Boil water and steam with medium heat for 12 minutes.

    南瓜做包皮通常很松软好吃的。喜欢它天然的黄色和松软的口感。
