蓝玉米排包 (Blue Corn Meal Bread/PaiBao)


反复练习着甩打面团,因为这个月的【面包物语】
我才成功做出一款面包
突然很想吃涂抹奶油咖椰的面包
所以做了这个造型简单的排包
讨厌,冷却了放在盒子后,表皮竟然皱了
可是依然无损它的美味

在烘培店买了一包Organic Blue Corn Meal
老板娘说这个比较适合制作面包
因为它没味道
颜色却有点淡淡的紫色
面团真的淡淡的紫,烤出来更加的淡了









 

Blue Corn Meal Bread

高筋面粉        Bread Flour           220g
低筋面粉        Low Protein Flour   40g
蓝玉米粉        Blue Corn Meal      40g
即发干酵母    Instant Dry Yeast     4g
细砂糖           Granulated Sugar    40g
盐                   Salt                       1/8 tsp
冷牛奶           Cold Milk             220ml
无盐奶油       Unsalted Butter      25g

做法 Method
所以材料,除无盐奶油外混合成团,揉出厚膜,加入无盐奶油继续揉出薄膜。
Mix all ingredients except unsalted butter,knead till thick membrane,then add in butter continued knead till dough become smooth ,elastic.

盖着发酵60分钟或双倍大。排气、分割5份面团,滚圆,休面15分钟。
Cover and let rise for 60 minutes or double the size.Push out air in the dough and divide to 5 portion.Roll and rest for 15 minutes.

面团擀成长形,折起两边到中间,捏紧,放在烤盘内。待发50分钟。
Flatten and roll dough into rectangle,roll each side to center,put in baking pan.Let rise for 50 minutes.

预热烤箱170度,面团刷上蛋液,烤25分钟,烤好放凉。
Preheat oven 170 degrees,egg wash and bake for 25 minutes.Let cool on rack after baked.

    面包软冷却后会皱的,除非做种。。。嘻嘻!

    1. Sharon,我也发觉哦,做种的面包,烤好后要小心拿,不然真的会皱皱的咧。。。呵呵

    Blue cornmeal sounds very unique to me. Can't really see any blue specks in your pai bao blue??
