口传食谱~~椰浆饭 (Nasi Lemak)


一早起身
就闻到烧焦味
阿拉马!
烟霾重新光临
因为天气热又没下雨
所以隔邻国家的烟霾吹来这里
听新闻播报这个鬼天气将会延续到年尾
噢买葛!



这个sambal食谱是一位当老师的马来客户口传给我
虽然她是大概大概说分量
不过我已经感激不尽
味道做出来很像我时常光顾的一个马来摊的椰浆饭
所以这个食谱我一定要记录起来
顺便跟大家分享


她说的辣椒干分量很多
我怕孩子不能接受所以把它减少了
变成我老的说不辣
其实我是发觉刚吃进口是不辣
吃久了它的辣才慢慢出来
所以孩子刚开始还蛮能接受的
可是吃吃吃
“妈咪,辣啊!”
哈哈哈哈




椰浆饭Coconut Milk Rice
材料Ingredients:
米Rice  2cups
香茅Lemongrass 1pc
姜Ginger 10g
椰浆Coconut Milk 250g
清水Water 适量some
盐Salt 少许To taste
班兰叶Screwpine Leaves 3pcs(tie them绑起来)

做法Method:
~~把米洗净,倒入椰浆和清水,把其余材料加入,开始煮饭。
Wash rice,pour in the coconut milk & water,add in others ingredients and start to cook.
~~清水要根据妳米粒的吸水量。
Add in how much water is depend on your rice.

叁巴辣椒酱Sambal
辣椒干Dried Chilies 18pc
小红葱Red Onion  4~5pcs
蒜米Garlic 2瓣cloves
虾酱Belacan 1tbsp
虾米Dried shrimp 1tbsp
片糖Tablet Sugar 1/2 pc
罗望子Tamarind 1tsp
温水Warm Water 1cup
盐Salt 1/4tsp
洋葱Onion 1pc 切圈cut ring
江鱼仔 Anchovy

做法Method:
~~把江鱼仔洗净,沥干。把江鱼仔炸至金黄色。辣椒干和虾米泡软。罗望子加入温水内。
Rinse and drain the anchovies.Fry till golden brown.Soak the dried chilies & dried shrimp.Soak the tamarind into warm water.
~~虾酱煎香。把小红葱、蒜米、虾酱、辣椒干和虾米放入搅拌器内搅烂。
Pan fry the belacan. Blend red onion,garlic,belacan,dried chilies and dried shrimp together.
~~勺两汤匙食油入平底锅,把搅烂的材料放入拌炒至香浓。加入罗望子水和片糖,炒至片糖溶化。
Heat some oil in pan and fry the blended ingredients until fragrant。Pour in the tamarind water and tablet sugar,fry until the sugar melted.
~~加入洋葱圈和江鱼仔,炒至洋葱圈变软。盛起。预留少许江鱼仔做配料。
Add in onion ring & fried anchovies,fry till onion cooked.Set aside. Leave some fried anchovies for dressing.

配料Dressing
水煮蛋Boiled Eggs
炸江鱼仔Fried Anchovies
炸花生米Fried Peanuts
青瓜Cucumber
炸鸡/炸鱼 Fried Chicken or Fish

  2. i must book mark ur recipe, my husband has been asking malay stayle sambal, u have been such a good help for this,we both cant eat spicy, so this might be good for us...thank u for ur recipe ^_^
